Simon,
you've asked multiple questions in your post.  the short answer is that there is no easy 
automated approach to your problem that i know of.  it comes down to old fashioned aerial 
photo interp.  there is a tool that works with ArcGIS called "Hawth's Tools" 
that can be downloaded for free.  I believe it can help you extract X,Ys for points.  
But, you'll have to place the points.  For the imagery you have that is already 
geometrically corrected and georeferenced, the X,Ys can be extracted easily.  For those 
that are oblique or simply lack a georeference, there is considerably more work involved. 
 luckily, geometric correction and georeferencing are automated tasks in most GIS 
software.  if you have terrain data and there is considerable relief, you will probably 
want to orthorectify your images prior to locating your points.  but all that is 
dependent on your question and the spatial accuracy/ precision necessary for your study.
