The RMBL is expanding its coursework offerings for undergraduates by offering a 12-week course, the Ecology of Food, in the fall of 2012. Overseen by Dr. Dev Carey, the class will begin in the Colorado Highlands and travel down the Colorado River to Mexico. Along the way, the class will visit intact natural ecosystems, artificial landscapes devoted entirely to head lettuce, organic farms, large-scale dairies, large-urban areas and small country towns. The class will explore which food is produced and consumed at each place, along with the consequences of consumption/production for water, energy, biodiversity, and natural ecosystems. The course will involve working with data, including reviewing statistical techniques, developing analytical skills, and writing papers. Additionally, the course will help students develop the ability to communicate complex science to general public audiences. Throughout, students will learn and work beside expert writers and scientists. Students will receive 15 course credits through Western State College.
