I watched this book develop over the years from a couple of courses Dr. Ford was teaching, and I think it might be exactly what you want. (disclaimer -- faculty colleague but with no commercial interest in book)

I have taught this class once before and I used a combination of The Ecological Detective and A Primer of Natural Resource Science. I thought those worked okay, but I was hoping to find a book that
