"The Complete Medicinal Herbal" by Penelope Ody has an encyclopedia-like 
section with a write-up on each herb and large color photographs of the 
plants in fresh, dried, and prepared forms.  Excellent photographs also 
accompany the instructions on harvesting, drying, and making herbal 
remedies.
