Each spring we have a choice of over a hundred salad plants. Most are considered weeds and some we consider "edible landscaping". I think about 80% of the plants around us are edible. The problem is deciding which ones to eat!
We probably should use more of the "weed" plants but with this bounty only a few of them ever make it into the kitchen. Instead we end up with the old favorites that have been selected over the years. Here is what we are eating this year: Bronze Arrow Lettuce - an old award winner you don't hear much about anymore. It is easy to grow. Plato lettuce - Easy to grow romaine type. pansy - perennial that grows itself. Flowers are great in salad. English Daisy - Perennial that grows itself. Flowers have little flavor but are good addition to salads. Bronze fennel - perennial that is easy to grow. Orageno - perennial herb. Shallots - Until the Walla Walla onions produce these are our favorite.
