Lisa, GIS has some sample maps built. Please take a look at them.
Plus, you need to be talking to the SAP EDI consultant to generate the IDOCs for you in the outbound cases and give you some sample IDOC files. You should also do some partner profile setup within SAP to accept inbound orders.
