You might want to check out the OBOE package. We have a working model of converting EDI messages to Excel. You can try it a try from http://www.americancoders.com/servlet/OBOEServlet ; paste in your message and then press the "Excel Spreadsheet" button.
If you feel this servlet works close to what you want then we can work with you to customize (remove the servelt portion and make it a mailer) and have the application generate a spreadsheet in a format that works for your end user.
