EDIFACT is the underlying UN standard. Its messages tend to be rather
large and cumbersome, since they have to cope with all eventualities,
but few of the segments and groups within them are mandatory. They
provide the framework from which the actual messages used in various
branches are derived.
EANCOM messages are subsets of the UN EDIFACT ones, primarily used for
retail. They are issued by GS1 (which used to be called EAN) and have
their own implementation guides and code lists. Because they are much
smaller and more tightly defined than the EDIFACT messages on which they
are based they are more useful in the real world, and are widely used.
