"Parsing EDI" generally refers to the process of taking a stream of 
characters as input and separating it into the various constructs 
defined by the relevant EDI standard.  For example, parsing X12 EDI 
involves separating out the interchange, group, and transaction set 
control segments, with their data elements, then the segments and data 
elements within the transaction sets.  If you want more information 
about the actual process of parsing an input character stream and how to 
do it, parsing EDI is just a special case of a more general problem and 
I would direct you to any good text book on compiler design.
