ARS The plus sign (+) is the default element delimiter in UN/EDIFACT. The colon (:) is the default sub-element delimiter in UN/EDIFACT.
In EDIFACT, these are called out in the standard, but other values may be used. In X12, there is no default for delimiters, you must select a set of values. A little research through the list's archives will yield links to the various authorities. Or you could read the fine manual.
