I would be more than happy to share my experience with you. There are certain 
guideline manuals for different aspects of EDI process's. Unfortunately one 
manual will not keep you up to date. Some things never change. EDI ANSI 
standards will always be the same. Short of that everything is slightly 
different from one another. It will mostly depend on the actual trading partner 
your tying to do business with. Here let me answer your original questions. 

1) Label set up will come from the trading partner. There are basic standard 
set ups but the trading partner can choose from the information that is to be 
displayed and you or someone will have to get those standards from your trading 
partner. 

2)EDI Law- is mainly the ansi standards meaning that the format of all EDI 
files will be the same. Still the actual mapping of that file will come from 
the trading partner. Defense and encryption will be dependent on the system 
that you use to translate the EDI, and the particular way you are sending your 
documents via VAN , AS2 , Ascii, ect. ect.

3)Security and Auditing- Will again come from the system you choose to 
translate the EDI data. Some systems archive all data for years with it very 
easy to retrieve any document created or received. Other EDI systems leave it 
all to you or give you no access at all. 

4) Online EDI thru XML- Can be a blessing and a curse. If it is a web site that 
the trading partner has already set up for you to import your information into 
and it automatically gets sent in XML to the trading partner. It should be 
easy. If the trading partner is asking for the documents in XML and you have to 
map to compliance then it gets tougher since there are no standards to XML 
mapping it will take an experienced mapper or third party mapping company on 
your side. They will have to get the mapping specs from what the trading 
partner receives and comply from there.
