For what it's worth, I've always been told that the ISA and GS date/time should be the current system date/time on the system that generates the EDI interchange.
Now this causes interesting things when you get EDI data from a system located West of the international date line (ie: Hong Kong, for example). The EDI interchange date/time stamp is "in the future" (ie: tomorrow) as related to your system if you're located in the US. If you've got any date/time checks in your maps, it can cause confusion!!
