To illustrate what is involved you could consider the mapping process as it was implemented in TIE ETC 2.x. You provide a description of your input and output file formats; the hierarchy, records, fields and properties. You then have a script which reads the input file and creates the output file. In the case of ETC the scripting language is quite powerful and enables you to do clever things; it is a program which you have to write. There are other more visual tools in which, whilst you still have to define the input and output, you can drag and drop data elements from input to output. The mapper then automatically generates the equivalent of the script which performs the data movement. In many cases you will have to complement this with 'code escapes', since in the real world there will be conditions attached to the data movement. If you start working with a particular product you will undoubtedly feel that this description is a gross over-simplification. Such is life.
