??? You should be *soliciting*  sales calls... from an EDI professional who 
knows as many as possible of your A) translator B) 
mapper and C) industry.
(None of which given here).

(Perhaps you meant you ARE soliticiting those sales calls but want then  via 
private email rather than public posting? Heck, that 
seems pretty reasonable to me).

I'm not a big fan of anyone telling me "how" to do something  (give me the 
"what", please, you're paying me to figure out the best 
"how"); that said, if you get anyone worthy of the moniker "EDI professional"  
you will end up with an effiicient and 
easily-maintained system. Unfortunately there is no way to tell "in advance 
without specific documentation"  if  "one map" or "one 
map with a limited number of partner-specific tailorings" is going to be such 
an efficient and easily-maintained system.

Note that if you want a "service"  (eg SPS) that's one thing, and if you are 
trying to get your translator/mapper/ERP system 
interface set up at your end, these are two different animals.
