I see 2 benefits of AS2:

Real time transactions vs polled or batch scheduled
Non-repudiation

When we make a decision on what communication protocol (if we our partner
gives us the choice), these are the 2 benefits that push us to AS2.  Over
time, we have standardized our communications around AS2 such that sFTP/FTPs
is now the exception.

This totally depends on the product. In my case all communication protocols
use the same tracking framework (within reasonable limites).

I don’t see any particular difference between ftp/s, sftp or http/s in terms
of throughput or latency. All three of them are bound to TCP speed, some
symmetric cipher overhead and some protocol envelops. Actually the PKCS#7
Overhead of AS2 is bigger than for the other two. But generally you won't
notice that unless you are a big Hub where you need to scale horizontally.
SSL (hardware) acceleration (i.e. ftp/s or https) is a bit more readily
available as ssh however.
