I'm used to using an old version of AMOS and even then there are many
tests you can run, I'm sure there are more in the newest version.. 
Maybe someone will point to a good source on the various texts, my
AMOS textbook and a couple others I've seen were not very detailed on
the testing.  You could always also look up the published literature
in your field to see what tests they published.

Off topic, anyone know how to get the diagram to draw the
*significance* (or **) beside each parameter estimate, except the
error, obviously? I've never seen this done except in LISREL so I
assume not possible.

You are correct that you should reject the first model since its p
value is <0.05..
