I'm sure Oliver will get around to telling you, but printing (and local
device access) are being worked on. Last estimate I got was around
October it should be ready to go. I think your method should help me
with the same problem I was having, so I might implement it myself as
an interim solution. I don't know how compatible this is with how
Oliver is puttin things together, though.

Sorry to answer my own question but I figured out an amount and got this
temporarily working.
I gave the thin client a static IP and rebooted it. I then logged in on
the thin client console (I created an account previously) and did:
- sudo /usr/lib/ltsp/lp_server -d /dev/usblp0 &
- exit
I then
- logged into the Edubuntu graphical system as usual,
- ran "system->administration->printers"
- clicked new printer, selected "HP Direct", put in the name of the thin
client (ip address would do either), selected the correct driver for my
printer.
- printed a test page successfully.
So, it works and relatively painlessly. What doesn't seem to work is that
even though I placed the entries in /opt/ltsp/i386/etc/lts.conf as
suggested here:

it didn't seem to automatically start the lp_server process. Is this not
currently supported on Edubuntu or do I presume I just got something wrong
in the syntax?
I guess if it's not there by default I can put in a startup script which
looks for the above ENV vars and starts the lp_server if they're set?
