Jim,

no need to remove anything you may need later.

I have very similar or even worse issues, so I install Edubuntu and then
xubuntu-desktop on top of it. That simple. Even clients can use it.

Another option, even ligther, is fluxbox or wmaker desktops, BUT less
friendly. However, my 2 kids (5 and 10) just get used to whatever
desktop they face, no complains.
