I was here the other day. It is okay to create options and to include the ip_forwarding line. It is the way. I use my K12LTSP server as my router for non-clients on my lan. I have to modify my /etc/ltsp/dhcpd.conf file to make 192.168.0.254 my gateway, *not* 192.168.0.1 as is the Edubuntu standard (for some reason.) I still perform the Masquerade step and then load the rules when I launch the network.
