I think the current website structure is fine, though it requires content to be added to it. The reason LTSP is not mentioned specifically is because we don't want edubuntu to be just about thin terminals. Its a very small part of what edubuntu is about, the more important part being the educational packages that are available. LTSP has its own documentation and its own mailing list, as well as its own hompage and wiki.
In terms of what is used, there are lots of options inlcuding kompozer, quanta, and bluefish.
