I tried to find more information on ntop's website, but alas, I cannot find
anything that can help me - do you perhaps have a link to some material that
will show me how to modify ntop on the EFW PC to capture and log monthly
reports?

Most of this info will be found on the NTOP site. Basically NTOP
purges data after it has not seen a host for awhile otherwise it will
eat all you memory. NTOP does use rrdtool and you can do build an
interface to store that data and use it all you want.
