Pardon my ignorance. I have been developing EJB for only 6 months now.
Why can't you just not have mutator methods in the entity bean itself?
That should take care of that. If you want to populate the database
just use a secure session bean using DataSource or have a client that
populates it on the backend. You can have your portability as well.
