In terms of empathy, I am running empathy 3.2.0.1 on ubuntu 11.10. Usually video/audio calling works for me but I don't know what codecs for audio and video I use. I tried to check but in my empathy clients version there is no way to change audio/video codec settings. So the default settings for google talk in my empathy client is what I use.
In terms of video conferencing and communicating via a group, I think people can also look at the jitsi (formerly known as sip communicator) program which is also open source/free software and runs I think using java. Its link is: http://jitsi.org/ and if you want to see its features you can check out this link: http://jitsi.org/index.php/Main/Features Jitsi also has the ability for a person to sign into google talk and talk with there friends on google talk via audio/video/instant messaging. Another program a person might want to look at in order to achieve video/audio conferencing, even though I am not a big fan of it is "skype." Its a good program just very restrictive but I don't think its better than sip. Hope the info helps.
