You write "your entire server stops responding", also you write "OS: SLES11SP3 (VMware)"
This is not clear to me. What is not responding? Is SuSE Linux your host or your guest OS? Is VMware not responding? Is SuSE Linux not responding? Or is ES not responding? What VMware product/version is this? I assume you run ES on a SLES11SP3 host, not guest. If so, I recommend to keep things simple for testing, and try an mlockall ES on the bare server OS. mlockall makes only sense in a host environment or on a HW-virtualized environment.
