If you zero beat an incoming CW signal to the SPOT tone, your transmit and
receive should be on the same frequency UNLESS:

1 - You have SPLIT enabled (you said it's off so it's one of the following)

2 - You have RIT enabled that causes the receiver to tune independently
using the RIT knob.

3 - You have XIT enabled that causes the transmit frequency to shift like
RIT. 

Note that you must match the CW tone to your SPOT tone,  not tune the
incoming CW signal for true "zero beat" (no audio). The K2 automatically
offsets the transmitter by that tone frequency to shift your TX frequency
onto the received station's frequency.
