The filter offset for 5-pole filters (like your 2.7 kHz filter) should be printed on a paper slip attached to the filter itself. The 2.1 kHz SSB filter is an 8 pole filter, and zero is the recommended offset for an 8-pole filter.
The recommended Loss Compensation (gain) settings for your 2.7 and 2.1 kHz filters are both 0. See K3 Utility Help. There's an index entry for "crystal filter configuration", and that help page describes the recommended offset and initial gain settings for filters offered by Elecraft.
