If you simply want to restore default CONFIG menu settings without doing a full recalibration, tap DISP (to the upper left of the LCD) while in each CONFIG menu, and you'll see the default setting appear momentarily in the VFO B display.
If it were me I would do EE INIT and a complete recalibration, but you should review the Calibration section of the manual first so you know what you're getting into.
