The toroids in the K2 and K3 (the rigs I am familiar with) are relatively small and they are held firmly enough by their leads that I haven't heard of any problems such as you describe. I recall a long-haul truck driver who had a K2 in his truck; he reported no trouble from the vibration.
Elecraft does NOT recommend that you use any kind of goop (technical term) to secure the toroids. It is not needed and can prevent adjustments to turn spacing or detune a circuit. I take my K2 camping and to field day and have never had anything come loose after more than 10 years.
