I think you mean the K3's Synch-AM receive capability, not VFO-TRK.
VFO-TRK is used to lock VFO A and B tracking together at the freq offset they have at the time it is enabled.

Hi, Don't know if you got your answer Al but VFO TRK is a ECSS (Exalted Carrier Selectable Sideband) mainly used for SWL on AM but can of course be used on Amateur AM reception to minimise fading and with selectable sidebands minimise QRM from one side. The K3 has a clever system that tracks the carrier automatically.
