For the simple reason that it is still considered a beta product. An important reason that Elecraft software and firmware has earned the reputation of being reliable is that it goes through serious beta testing by hams who are both technically knowledgeable and great operators.
As it happens, I too made measurements for one of my neighbors who wanted to compare FSK and AFSK with his K3, and AFSK used significantly less bandwidth. Tests were done with current firmware, not the new beta.
