You have a couple of options here in the USA: You can sign using the call sign of the owner whose station you are visiting or you can sign using your own call sign.
Note that if you are using the owner's call sign, he/she is still the "control operator" responsible for your actions. Also, you must operate within the restrictions of his class of license. Similarly, if you have a class of license that does not permit operation on the mode or frequency in use, you are simply an unlicensed visitor. The control operator must operate the transmitter and identify the station with his/her call sign. In that situation, there's nothing wrong with identifying yourself as a Ham and even giving your call sign during a transmission, but the call sign identifying the station must be that of the control operator licensee. Back in ancient times when the FCC assumed we were operating only from the address on our license unless we signed "portable", that's how you'd identify yourself if operating someone else's equipment away from your station address. Many Hams still do that today. The FCC is fine with such appendages to the official call provided they don't confuse the station call sign with anyone else. Similarly, in ancient times if we visited another Ham we were obliged to sign their log if we operated the station. That stopped when the regulations ended the requirement for log books.
