Mike, My recommendation is that you carefully examine the work done so far. Check each solder connection and check each component for proper value and placement in the correct holes. Trust that nothing is correct until you have verified it.
If the display is not showing all segments, try soldering the pins from the top of the board. The LCD pins do not stick very far through the board and the solder junction can look OK, but be bad because the pin was not heated sufficiently.
