John, I think you mean 50Hz, not 50kHz.
That offset is only used when using CW in SSB mode - and it should be set to the tone you want the receiving end to hear when you switch to CW.
For normal operation (not CW in SSB), the CW offset is always equal to your sidetone pitch. The transmit signal will always be at the displayed frequency. It is the receive frequency that is shifted, and you do do not have to do anything. The reason for the shift is so you can hear the other hams signal at your chosen sidetone pitch. That is also why you want to tune a CW signal to your chosen sidetone pitch (zero-beat) so you will listen and transmit on the same frequency.
