Certainly it is possible (and desirable) to center the CW filters at your chosen sidetone pitch. Adjust the BFO frequencies to do just that. Spectrogram is the tool of choice for most folks to adjust the passband positioning. If you have not used it before, I refer you to the info on my website http://w3fpr.qrpradio.com in the K2 dial calibration article, and also to the information that Tom Hammond has on his website www.n0ss.net .
