If you activate the RIT/XIT, I am guessing that you can monitor that
as an option in the VFO B display.  But...does it show the frequency
or the amount of offset (or can you select that too)?   I'm hoping one
can see the offset in KHz (+/- 0.00).

When you activate RIT there is an RIT icon in between the VFO A and VFO B displays that becomes visible.

The VFO A display (assuming you are receiving on VFO A) shows the new operating frequency. The B display shows the amount of offset. After a couple of seconds of no further RIT know turning, the B display reverts to whatever it was displaying before you turned the RIT knob.

If you subsequently turn the RIT knob, the B display agins shows the amount of offset until a second or two after you stop turning it.

I "get" the center "detent" LED, but what are the other for (at each
end)?  End of range?

No, just reminders that you are both enabled and offset.
