Jack, I had exactly the same problem in the last K2 I built. Obvioulsy they got a batch with "shortlegged" diffusers at Elecraft, hi! However it's pretty easy to overcome this problem. My method is similar to the J-hook method by WB7SS.
I attached the spacers to the diffuser (the leads completely flush with the spacers) and put a thin discarded component lead into each hole. Using a VERY SMALL amount of solder, I "filled" each hole with solder, using a thin tip iron. It's enouogh to just "wet" each hole with solder, and there is not room enough for any solder blobs (if so, the space between the diffuser and bisplay board will be incorrect). You need a steady hand, a small tip iron and patience. If solder blobs is created - clean the assembly and redo the whole thing. When everything seems to look fine, attach the diffuser to the display board and continue as per the K2 manual. This worked fine for me. 73/2!
