I would also like to see separate (or even NO) EQ on RX/TX for data modes.
I often set up the RX EQ so SSB sounds good, and then when I go back to
PSK I see the waterfall is very noisy and odd looking.

No, but the K3 should have a mode memory so that particular EQ
settings (including OFF) remain with particular modes when changing
back and forth. TX EQ can be potentially useful in equalizing the
amplitudes of the four tones in FSK441 (used in high-speed meteor
scatter) if the TX passband isn't quite flat. You might even want to
boost the high and low tones just a tad to compensate for other guys'
too-narrow passbands on RX...

I am not sure I like that result. Should the TX EQ (and for that
matter the RX EQ) be turned off automatically in DATA A and AFSK
modes?

Tx EQ only applies to modes where audio is used to create the final
transmission. So it applies to AM, FM, SSB, DATA A and AFSK, but not
FSK-D, PSK-D or CW.
