The "cw keying in ssb modes" feature is documented in the firmware release notes at:
http://www.elecraft.com/K3/k3_software.htm including instructions for controlling the feature via the CONFIG:CW WGHT menu. Look in the section for release MCU 1.87 / DSP 1.69.
