Jeff,

For recording software, I suggest Total Recorder (www.highcriteria.com) for recording ease. It is not free, but is budget priced and does the task well.

If you are looking for something free, I suggest you look at Audacity from www.sourceforge.net - it is a great audio editor and is open source and multi-platform.

I record with Total Recorder and edit with Audacity myself.
