If you really want to be able to play *all* files that people may want, then you won't have enough with all the existing gstreamer plugins ;). More reasonably, you should have a look at each plugin, one by one, and think if you need it (you can have a description of the plugin by running gst-inspect-0.10 <plugin name>). Since Elisa uses playbin, you want to have this, and all the plugins it uses (I don't know if there's a list available somewhere). Also, in the case of elisa, you won't need any video sink, since it uses pigment's custom sink which is distributed with pigment.
