Hi again, I have continued playing with the Hebrew example on main (shortly) and the feature branch and added a couple more of findings to it. Attached is the org file and generated output. Can someone speaking Hebrew confirm that the output "makes sense" ;-) I really have no clue. Just played with the overleaf.com example.
And once again, it seems the only thing we need is a variable to define the fonts. I will give it a try on the feature branch and report back. There's also an example for arabic and farsi. Could someone knowing what the text says try to transform it the same way as I did and report back? The polyglossia approach seems quite feature complete. At the end we might have fontspec and polyglossia as equal partners for people to choose from.
