I just tried
printf '%s\n' '| =10+20 | 30 | =foo= |' | pandoc -f org -t latex

\bottomrule\noalign{}
\endlastfoot
\texttt{10+20\ \textbar{}\ 30\ \textbar{}\ =foo} \\
\end{longtable}
The table cells are not there.
