This is indeed a problem, but a wider one. Especially for more complex settings like org-agenda-custom-commands or org-capture-templates. If we want to solve it, it should be something applicable beyond ox-latex. My vague idea is introducing more user-friendly macros that can take care about underlying complexity using some simpler DSL, but I did not think much what it should be and how it should be implemented.
