I've looked into this. The diagnostic is correct, the extra '\\' is
inserting an extra line.
Solutions:
1. DRASTIC: remove this extra backslash silently. It may change the
appearance of some legacy documents, although the compilation will succeed.
2. Add a new variable (eg. `org-latex-table-suppress-extra-space'). It
would default to nil. In this case, the '\\' would be emitted. When
non-nil, the '\\' would be supressed.
