The issue is (please correct me if I'm wrong) that turning on 'visual-line-mode' can make text pretty by doing soft line wrapping but this then makes tables ugly. It would preferable if tables always got truncated, not wrapped. It is pretty natural to assume there would be some built in feature to say certain lines should be wrapped and certain lines should be truncated. If such a feature did exist, it would also be pretty natural that it would done through text properties. If such a text property existed, then Org could simply insert tables with the "truncate this line" property set. Alas, this does not exist and cannot be bolted on since Ihor has said the logic in implemented in C, not elisp. I haven't confirmed this myself. This is probably a discussion that should be opened upstream with Emacs.
