The "Non-ASCII Isearch" node of the Emacs manual says:
To enter non-ASCII characters in an incremental search, you must use an
input method (*note Input Methods::).
But one can also use quoted-insert (C-q), which is documented in the
"Inserting Text" node that should also be referenced here.
