You should look at this from a project management view. Maybe you know gantt charts ? The task is one and only one task that spans multiple days. So if it is marked as completed it should be marked as completed for all days. However it then should not appear on days past the day of completion. So, if you had a task starting on monday and ending on friday, it should first be mentioned on this 5 days. If you mark the task as completed on wednesday, it should be removed from thursday and friday.
