Encoding and compression are two different things. AppleDouble is often a 
good choice for a default, but I find that some people on Windows have an 
easier time with Base64. Binhex is a Mac-only format. Don't try to use it 
for anyone not on a Mac. In fact, don't use it at all unless there's a 
very specific reason to do so.

It is important to uncheck "compress files" before sending to anyone not 
using a Mac, since it uses Stuffit for compression. Most PC users don't 
have a copy of the (free) Stuffit Expander for Windows.
