Because what you see in an email has nothing to do with its delivery info at the server. All the info you see, date, subject, to, from, everything, is put in there by choice by the sending email client. A totally different set of info is used for actual delivery of the email. The reason why you will always see at least a received date is because Emailer puts that info into the headers of the email when it downloads it.
