Doug,

You didn't list the particular preference to which I was referring. Even 
with all the settings you have verified, it would be possible Mail still 
uses HTML if replying to an HTML inmessage. 

UNLESS . . . you observe the following:

>> On the "Composing" pane of Mail's preferences window (same pane where
>> "Plain Text" was selected as "Format" of outgoing messages), there's a
>> section, "Responding," with a check box for "Use the same message

>> as the original." . . . If you "Reply" to an incoming message that was
